Monte São Sebastião White, results from a blend of Rabigato, Códega do Larinho and Viosinho.
Vinification took place during the first week to the end of September. Maturation control was carried out during the month of August.
Freshly picked grapes are immediately processed, thus inhibiting high phenolic extraction.
The grapes are hand-picked and arrive at the winery in 20 kg boxes.
Vinification took place in stainless steel vats at a temperature of 14ºC to 18ºC, in order to maintain the primary fruit aromas and preserve them from the amyllic aromas of low temperature fermentation.
