Monte São Sebastião Reserva White, results from a 25 year-old vineyard where the Rabigato grape variety has been planted.
Vinification
The vinification took place during the first week to the end of September. Maturation control was carried out during August.
Freshly picked grapes are immediately processed, thus inhibiting high phenolic extraction.
The grapes are hand-picked and arrive at the winery in 20 kg boxes.
Vinification took place in stainless steel vats at a temperature of 14ºC to 18ºC in order to maintain the primary fruit aromas and preserve them from the amyllic aromas of low temperature fermentation. The wine spent a period of 6 months in French oak barrels (2nd year of wine use). Afterwards, it was aged in bottle for a period of 3 months.

Gastronomy
Wine with great gastronomic versatility, accompanying light dishes of seafood, while the new and elaborated dishes of white meat or cheeses cured and seasoned when aged.
