Monte São Sebastião Rose, results from the blend of Touriga Nacional and Tinta Barroca grape varieties.
Vinification
The vinification took place during the first weeks of September. Maturation control was carried out during August.
The harvested grapes are immediately processed, thus inhibiting high phenolic extraction.
The grapes are hand picked and arrive at the winery in 20 kg boxes.
Vinification took place in stainless steel vats at a temperature of 14ºC to 18ºC in order to maintain the primary fruit aromas and preserve them from the amyllic aromas of low temperature fermentation.
